Many ingredients can be swapped — butter for margarine, buttermilk for milk plus a splash of lemon juice, and so on. We include substitution notes in the tips where they matter most. Baking is a bit of a science, though, so big changes (like flour types or sugar amounts) can affect texture.

Most cookies keep in an airtight container at room temperature for up to a week — tuck in a slice of bread to keep them soft. Cupcakes are best within 2–3 days; refrigerate any with cream cheese or custard. Flan and cheesecake should always be refrigerated and are happiest eaten within four days.

Usually the butter was too warm, the dough wasn't chilled, or there was too little flour. Try chilling the dough for 30–60 minutes and measuring your flour by spooning it into the cup (or weighing it) rather than scooping.

Both are signs of too much heat. Bake flan in a water bath at a low temperature (around 325°F) and pull it from the oven while the center still jiggles. It finishes setting as it chills. Straining the custard before baking also helps it stay silky.

These recipes are written for standard baking conditions: roughly sea level up to moderate elevation, a conventional home oven (temperatures in °F), North American measurements, and a normal room temperature around 68–72°F (20–22°C). At high altitude — generally above about 3,000 feet (900 m) — lower air pressure changes things: leavening expands faster, liquids evaporate and boil sooner, and bakes can rise quickly then collapse, dry out, or over-brown. As rough starting adjustments up high, try raising the oven temperature 15–25°F and shortening the bake a little; reducing baking powder or soda slightly (about 1/8–1/4 tsp per teaspoon); cutting sugar by a tablespoon or two per cup; and adding a tablespoon or two of extra liquid. Sturdy bakes like cookies and quick breads are fairly forgiving, while delicate cakes are the most sensitive. Treat these as starting points and adjust to your kitchen — and if you bake at altitude, I'd love to hear what worked for you.

These recipes are newly developed for Zoe's Baking Emporium, built on classic, trusted baking ratios and standard techniques — they're not copied from another site or cookbook. Being honest: they haven't yet been through rounds of reader testing, so treat them as a starting point, bake with a baker's eye, and if you try one I'd genuinely love your feedback so I can refine it.

Are the photos of the actual finished recipe?

Not exactly. The photos are royalty-free stock images (used under the Unsplash License) chosen to represent each type of bake — so a cookie recipe shows cookies, a flan recipe shows flan — rather than a photo of that specific recipe's result. Over time these would be replaced with photos of the actual bakes.
