
Cinnamon Flan
Warmly spiced flan infused with cinnamon sticks — comforting, fragrant, and perfect for cooler evenings.
Ingredients

Caramel
- 1 cup granulated sugar
- 1/4 cup water
Custard
- 4 large eggs
- 2 large egg yolks
- 1 (14 oz) can sweetened condensed milk
- 1 (12 oz) can evaporated milk
- 1 cup whole milk
- 2 cinnamon sticks
- 1/2 tsp ground cinnamon
- 1 tsp vanilla extract
Instructions

Heat the oven to 325°F and boil water for the bath.

Cook the sugar and water to an amber caramel and pour into a 9-inch dish, swirling to coat.

Warm the whole milk with the cinnamon sticks for 10 minutes, then remove the sticks and cool slightly.

Gently whisk the eggs and yolks, then whisk in the condensed milk, evaporated milk, cinnamon milk, ground cinnamon, and vanilla.

Strain over the caramel, set in a roasting pan, and add hot water halfway up the sides.

Bake 50–60 minutes until just set, then chill 4 hours before unmolding.

- Dust the unmolded flan with a little extra cinnamon for presentation.
- Mexican canela (soft cinnamon) is especially lovely here.
