
Coffee Cake
Tender sour cream cake with a cinnamon streusel ribbon and crumbly topping. Made for a slow morning and a hot cup.

Streusel
- 3/4 cup all-purpose flour
- 3/4 cup packed brown sugar
- 1 1/2 tsp cinnamon
- 6 tbsp cold unsalted butter, cubed
Cake
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 cup sour cream
- 1 tbsp vanilla extract
Instructions

Heat the oven to 350°F and grease a 9x9-inch pan.

Mix the streusel ingredients with your fingers until crumbly; set aside.

Whisk the flour, baking powder, baking soda, and salt together.

Cream the butter and sugar, then beat in the eggs, sour cream, and vanilla.

Fold in the dry ingredients just until smooth.

Spread half the batter in the pan, sprinkle with half the streusel, add the rest of the batter, and top with the remaining streusel.

Bake 40–48 minutes, until a toothpick comes out clean. Cool before slicing.
