
Maple Flan
A cozy Canadian-inspired flan sweetened with maple syrup, with a deep amber caramel to match.
Ingredients

Caramel
- 3/4 cup granulated sugar
- 1/4 cup pure maple syrup
- 2 tbsp water
Custard
- 4 large eggs
- 2 large egg yolks
- 1 (14 oz) can sweetened condensed milk
- 1 (12 oz) can evaporated milk
- 1/3 cup pure maple syrup
- 1 tsp vanilla extract
Instructions

Heat the oven to 325°F and boil water for the bath.

Cook the sugar, maple syrup, and water to a deep amber caramel and pour into a 9-inch dish, swirling to coat.

Gently whisk the eggs and yolks, then whisk in the condensed milk, evaporated milk, maple syrup, and vanilla.

Strain over the caramel, set in a roasting pan, and add hot water halfway up the sides.

Bake 50–60 minutes until just set, then chill 4 hours before unmolding.
